Looking to get some off road wheels and tires for my 2001 4x4 Ram 3500 that was converted to single rear wheel. (Not too worried about the rear) I have a 2 inch leveling kit in the front but other than that the suspension is completely stock. Idealy I would like to run 35's on an off road rim. Any precausions I should take to prevent rubbing? Also any brand suggestions on wheel and tire brands? I live in southern California and Im going to be taking my truck down to Baja Mexico where theres a bunch of rocky dirt roads.

With correct backspacing of wheels, yes you can fit 35's with 2" level without rubbing.

You may be able to fit 35's with a 2" leveling kit, but if you plan to drive at any speed over rocky dirt roads, that is something else entirely.
