Are valve spring just put on item or does the head need to go to the machine shop to get shimmed?

I know that for the Hamilton springs the head doesn't need to come off. I can't speak for any other though.

Typically yes, but for the average build you won't be pushing things to the limit.
With a larger center and lower rpm the cam will not notice the stress caused by the uneven valve spring load.
