When pulling a trailer about 10,000lb up hill the rpms will shoot up and can hear some chatter. Would this be clutches, converter or something else.

Sounds like it to me..

Probably burned the directs or the forwards up.

I back out of it as soon as it starts. Then it will down shift and seems ok.

Depending on what gear you are in and other factors it will slip.

I think it was in third 200,000 miles

Any suggestions on what do to the trans. The truck is for hauling / towing I might add a little power with a tuner but nothing crazy.

I would contact Goerend, find local builder they recommend.
Talk to them about valve body and convertor for your intended use.
