Your 160 pump and injectors are not going to be great for free power, but the 160 pump is also a better starting point if you want to make big numbers. The best engine for free power would be the 215hp 96-98s as the pump flows more fuel and the injectors are bigger. but the 215hp pump has its limitations in high hp applications due to its retard notches in the plungers.

No adverse effects on the pump, but when you start adding fuel you definately want to watch EGTs and boost for safety. Im not sure how much that car weighs but im sure its lighter than a 8000lb+ ram so its likely that a bit of extra fuel isnt going to be much of a concern at all.

As for wiring up the TC and OD. Why not just use a dodge ram PCM?

They are a very simple system and it controls the grid heaters/charging and trans functions. I would try to rig up a PCM if at all possible. Save having to f-around with manual OD and lockup switches.
