What settings on mini where you running? Timing? And defuels settings on? I could be wrong but it sounds like you popped your head gasket? Also you need to post your mods so we all know what your working with.

2011 Dodge Ram 3500 running hot
I have installed the H & S Mini Maxx, dpf delete, installed 5" exhaust and
S & B air box and filter. After 2 years with 37,000 miles engine temp goes to 240 back to 140. Heat going ice cold, not loosing any coolant and have changed thermostat, no change. Any ideals please? Had zero problems till this!
