yea its normal if you watch it right when it goes to 190 it will go a little over then drop under then go back to 190. its just the coolant cycling through but it should only do it 1 time then stay around 190.
Its a common thing with the early trucks from what I hear and see in mine. Later models fixed the problem by moving the sender unit to an area that does not fluctuate as much. There is a thermostat that will make it a little better, but from the posts I have seen, some guys have problems when they load the motor up so I would just leave it.
