Go pick up the truck and take it for a drive, if it goes into limp mode take it directly back and don't shut it off until they can read the codes, or at least take them for a ride so that they can see what's going on. As long as they give you a loaner just keep taking it back to them until it's fixed.

When you live 100 miles from the nearest dealer, it's really not feasible to plan your life around dropping everything and driving to the dealer any time your truck misbehaves -- assuming the dealer is even open at the time. Makes it hard to keep a day job.

It hasn't been mentioned yet but this might be the reason why the OP was able to buy a 2017 with 20k miles on it. The original owner was probably battling these issues as well and it was bought back as a lemon or just traded.

CarMax bought my Ram back for the same price I paid two months ago. To say I was surprised is really understating it. But I think they might have realized they didn't quite do the vetting they should have on this particular truck.

I got the Tacoma, which should actually work better for my needs.

That was my thinking as well; I think I inherited someone else's problem and CarMax realized they had taken in a lemon, and that it would cost them a lot less to make it right than it would for me to lemon law it. I'm happy with the way things worked out.
