Offset adn backspacing on wheels

I just bought my new truck and will have it leveled next week. I plan on going with the 33" Toyo Mts with a set of Hoss Black and Machine wheels. The Hoss comes in 2 sizes of offset 18mm and -12mm. They also have different backspacing. My questions is this which wheel sticks out more? I know its a newbie question but I don't like my wheels to stick out 2 far.I appreciate any feedback.

-12mm will stick out more (30mm to be exact since the other size is +18mm).

It might rub as well. I have 5 5/8" backspacing and a +14mm offset and have not had any rubbing on either the fender well or the control arms I have 35" Toyo's with a level kit.
