Question Would Upgrading 16" to 17" Make Much Difference?

I'm considering upgrading my stock 16" wheels for some 17s. I'm interested in a bigger tire, just wondering how much difference there would be between the largest diameter 16" and largest 17"? Would it affect MPG much?

I found this tire website that has lots of good info, but don't see much info about 17" LT tires.

Also, I am assuming stock rims from later Dodge trucks will fit my 2001...someone please advise if that is not the case.
