Nitto makes a perfect tire for what you are after. It's called the Dura Grappler. I posted a write up from Offroad Magazine on this tire. If you do a search I'm sure you can find it. I would contiune to run the 285/75-16s. This is a great size that functions very well. Here's a link on the Dura Grappler.

Edit-Here's the link to the write up.

Wow that's crazy! What size did you run and are they on your factory wheels?

I had a set on my 06 Dodge, 305/55/20E and I put around 12,000 miles before I sold the truck. I rotated them twice and they did not show any signs of wear.
The ride was a little harsh, not bad, and for towing my toy hauler fully loaded, they performed much better than the stock tires do. Good traction in almost all situations, snow, dirt, street, the only area I had problems was in the sand, and that is probably because they were so low profile. Aired down, they worked fine in the sand.
I will probably buy another set when my stockers wear out.
I liked them.

Just so everyone knows, the Nitto Dura Grappler has a 60K mileage warranty for all P-Metric sizes and a 45K mileage warranty for the LT sizes with the Dura Belt Technology. See the link below for more details
