to my knowledge lack of oil pressure does not shut this engine down.

Nope, won't shut down. Mines been running for over a month and a half with a bad sender with no problems, only the check guages light is on. I installed a mechanical oil pressure guage just to be sure I had pressure.

The 6.0 and 7.3 liter power strokes shut down when they have low oil pressure because their injectors rely on a high pressure oil system that is fed by the low pressure system to fire the injectors

There is no low oil shutdown on the cummins to my knowledge and I wrench on ford diesels they don't have one either. Little side note the power stroke heui injection system on the 6.0 and 7.3l engines wasn't designed by ford or intertrashional it was designed by caterpillar and if they would leave it alone it's extremely reliable
