truck getting hot.. new thermostat

i searched but didnt find what i was looking for. what is the normal/safe operating temperature range for these trucks? when its over 100 degrees outside and i run my ac in city driving, it will go over 200 degrees. it was way worse but i put a new cummins thermostat in it and it helped a bit. i dont like it goin over 190 but is that just how they are?
any help will be great. im going to check to see if the radiator is gummed up maybe that could be part of it.

mine does the same thing mine gets to about 204 when its hot outside and i have the A/C on and so does every other 2nd gen around here in Indiana so yea its normal

Mine tops out at 208*F (ScanGauge II displayed) running in 120*F weather with A/C on, climibing grades, with a load of firewood...

But as soon as I hit flat ground it drops to 200*F for 65 MPH hauling heavy with A/C...

Its a diesel. 200-210 is no problem for it.

so last weekend i was towing my buddies wakesetter campin up a huge hill and my truck maxed out the temp gauge 3 times before i made it to the top of the hill. so i fiigured there in fact was aproblem with my truck. so i took my radiatior out and this is what i found... it didnt even look bad when it was in the truck. the pic shows the front of it. the other side was full of oily crap i havent test driven it yet but im hopin that will make the difference

so like the two guys before me i would suggest a full radiator cleaing inside and out.
