97 doge 12 valve into 78 ford

I am new to the diesel world and bought a 97 dodge doner truck with 12 valve cummings i think it has a 48 R E trans w 15000 miles. I pull alot with my 79 ford with a 460 auto and 456 gears I have 36 inch tall tires on it and i need the guel milage out of the diesel. I am wondering if i should keep the auto trans or go with a 5 speed & what gears should i go with with 36 in tires ??? I aprieciate any info i can get. thanks so much
